I cannot believe today is the last day of August! It is Labor Day weekend, the unofficial end to summer. I go to back to work in less than two weeks. The thought of it makes me a little nervous. I found a daycare that I trust, but it will be another adjustment adding work into the mix.
Today has been better than yesterday, so I am using it to relax. Today I want to share a recipe with you for the holiday weekend.
I have had a go to recipe for years and I really want to share it with everyone! I am a big fan of this recipe. My aunt used to make it and everytime I would try to make it I would have to call her and ask which part of the recipe I had to double. I do not know why it took me years to get that part down. I finally got smart and just changed the recipe to reflect the modification.

Ice Box Torte:
Crust
2 cups Flour
2 sticks Butter
1/2 cup choped nuts (optional)

Mix and pat into a 9x13 dish - Bake @ 350 degrees for 15 minutes or until light brown - cool

Layers
8 oz Cream Cheese
1 cup Confectionary Sugar
5 oz Cool Whip (1/2 10oz container)
2 boxes of Instant Pudding (Chocolate, Butterscotch, Lemon, anything really) I usually use Chocolate
3 cups of Cold Milk

Beat Sugar & Cream Cheese together. Fold in the cool whip. Spread over crust.
Whisk Instant Pudding and Milk together until well blended. Pour over the Cream Cheese layer.
Set in fridge and top with remaining cool whip (5 oz.) Then sprinkle with nuts or sprinkles for decoration.

This dessert is great for summer events - it is a cool dessert. I make this dish when I need something last minute for an event. It is really easy and really delicious :)
